We begin with premium soy sauce imported directly from Japan, where it has already undergone traditional aging. Upon arrival, we introduce it to our own distinctive aging process in bourbon barrels previously seasoned with our signature maple syrup. This foundation is then enhanced through several days of careful smoking with Michigan cherry wood, infusing a subtle but definitive smokiness impossible to achieve through conventional methods.
The result speaks with remarkable complexity: chocolate and cocoa notes emerge first, followed by vanilla and baking spice, with oak undertones from the barrel heritage. The cherry wood smoke integration creates a dimensional soy sauce with viscous texture and profound umami depth—something standard soy sauces simply cannot approach.
