When we first aged maple syrup in freshly emptied bourbon barrels, we weren't following trends. We were expanding boundaries. Michigan maple sap, harvested at peak season, meets Kentucky bourbon barrels still wet with their previous contents. The process is straightforward but transformative.

BLiS™ Bourbon Barrel Aged Soy Sauce

We teamed with Yamato Soy, one of the best shoyu producers with over a century of brewing experience, to bring you our bourbon maple barrel-aged soy sauce.
This non-GMO soy sauce is aged in Kanazawa Japan in Japanese tradition for one year, then aged for another year in BLiS tradition with our twenty-year-old maple-cured bourbon barrels.
The results are flavor notes of chocolate, cocoa, vanilla, spice, and oak with a viscous umami kick.

BLiS™ Hardwood Smoked Soy Sauce

Aged in our cured bourbon maple barrels, this limited batch of Harwood Smoked Soy Sauce has been smoked with Michigan cherry wood for several days to infuse a subtle but definitive smokiness that sets BLiS smoked soy apart from all the others. To represent the use of cherry wood and honor the Michigan cherry farmers, we have produced a label made from cherry wood.
The raw product, Yamato Soy, is the same shoyu that we use for all BLiS soy sauce products. Aged in Kanazawa Japan and then imported to age in our proprietary aging process, this non-GMO soy brings to the palate flavor notes of chocolate, cocoa, vanilla, spice, and oak with a viscous umami kick.

Ponzu reimagined from the ingredients up.
We built this sauce using our own barrel-aged foundations – not shortcuts. Four signature BLiS products work in concert: yuzu vinegar, maple-bourbon aged soy sauce, barrel-aged fish sauce, and Michigan bourbon barrel aged maple syrup. Then we introduce spruce tips and kombu to create something entirely new.
