Roasted Moroccan Carrots

This collaboration with The Chef's Garden takes farm-fresh carrots to new heights using a blend of warm spices and two of our barrel-aged products.
What makes these carrots special is the layering of flavors. We start with quality carrots from The Chef's Garden, peeled and coated in olive oil before being seasoned with a Moroccan-inspired blend of clove, cinnamon, and paprika that transforms ordinary carrots into something extraordinary.
The magic happens in the final stages. Our Bourbon Barrel Aged Maple Syrup adds a complex sweetness during the last minutes of roasting, caramelizing slightly in the heat. Then comes the unexpected element - a light toss in our Bourbon Barrel Aged Fish Sauce. This isn't about adding fishiness, but rather a subtle umami depth that makes you wonder what that incredible flavor is without being able to quite identify it.
This dish demonstrates how two distinct BLiS products can work together with traditional spices to create something greater than the sum of their parts. It's simple enough for a weeknight side yet sophisticated enough for special occasions. The perfect way to elevate humble carrots into the star of the meal.
Method
Prepare the carrots: Peel Chef's Garden fancy carrots to an even thickness and coat with extra virgin olive oil.
Season: Mix 1 tablespoon each of clove, cinnamon, and paprika (reserving a pinch of each for garnish). Sprinkle this mixture over the carrots to evenly coat.
Roast: Place carrots in a shallow roasting pan and cook in a 385°F oven until tender but still firm.
Add sweetness: Remove from oven, drizzle with BLiS Bourbon Barrel Aged Maple Syrup, and return to the oven for an additional 5 minutes.
Finish with umami: Take carrots out of the oven and toss with BLiS Bourbon Barrel Aged Fish Sauce while still hot.
Serve: Transfer to a serving dish, sprinkle with the reserved pinches of spices, and serve immediately.
