Chickpea Carrot Salad Dressing Ingredients
- 2T extra virgin olive oil
- 2T fresh lemon juice plus zest from ½ of the lemon
- 2T fresh orange juice
- 1T honey
- 1/2t salt
- 1/2t ground cumin
- 1/4t ground ginger
- 1/4t ground cinnamon
- 1/4t teaspoon ground coriander
- 1/8t ground allspice
- 1/8t cayenne pepper
Chickpea Carrot Salad Ingredients
- 1/2 pound carrots, peeled and coarsely grated
- 3 T currants
- 1/4 cup slivered almonds, toasted
- 2T chopped fresh mint, plus more for serving
- 2T chopped cilantro, plus more for serving
- 8 ounces of chickpeas
- 1T finely minced shallots
- 1 garlic clove, minced
Chickpea Carrot Salad Instructions
- In a large bowl, whisk together all of the ingredients for the dressing.
- Pour the dressing over the salad ingredients and toss. Taste and add additional seasoning if necessary
- Refrigerate for at least an hour
- Transfer to a serving dish and garnish with chopped mint and cilantro. Serve cold or room temp with the grilled lamb chops on top.
