Chickpea Carrot SaladChickpea Carrot Salad Dressing Ingredients

  • 2T extra virgin olive oil
  • 2T fresh lemon juice plus zest from ½ of the lemon
  • 2T fresh orange juice
  • 1T honey
  • 1/2t salt
  • 1/2t ground cumin
  • 1/4t ground ginger
  • 1/4t ground cinnamon
  • 1/4t teaspoon ground coriander
  • 1/8t ground allspice
  • 1/8t cayenne pepper

Chickpea Carrot Salad Ingredients

  • 1/2 pound carrots, peeled and coarsely grated
  • 3 T currants
  • 1/4 cup slivered almonds, toasted
  • 2T chopped fresh mint, plus more for serving
  • 2T chopped cilantro, plus more for serving
  • 8 ounces of chickpeas
  • 1T finely minced shallots 
  • 1 garlic clove, minced

 Chickpea Carrot Salad Instructions

  1. In a large bowl, whisk together all of the ingredients for the dressing.
  2. Pour the dressing over the salad ingredients and toss. Taste and add additional seasoning if necessary
  3. Refrigerate for at least an hour
  4. Transfer to a serving dish and garnish with chopped mint and cilantro. Serve cold or room temp with the grilled lamb chops on top.
