For the Cake
3 eggs from the coop
1 1/8 c brown sugar
1/4 c BLiS Maple Syrup
2 1/2 tsp baking powder
1/3 c Duke's Mayonnaise
1/8 c arbequina olive oil California Olive Ranch
1/3 c Greek yogurt Chobani
1/4 c almond butter
Peels of one grapefruit chopped
Pinch salt
For Glaze
Juice of one grapefruit
Enough powdered sugar to make “creamy” or opaque.
Cream eggs and sugar to fluffy.
Combine all other ingredients.
Beat to smooth.
Bake at 350f for 30 minutes.
Remove and cool.
Combine sugar to grapefruit juice. Pour over cake. Allow to set. Slice. Serve.
