Ponzu reimagined from the ingredients up.
We built this sauce using our own barrel-aged foundations – not shortcuts. Four signature BLiS products work in concert: yuzu vinegar, maple-bourbon aged soy sauce, barrel-aged fish sauce, and Michigan bourbon barrel aged maple syrup. Then we introduce spruce tips and kombu to create something entirely new.
The result defies convention. Bright citrus notes from yuzu vinegar cut through richness. Umami depth from aged soy and fish sauce provides foundation. Subtle sweetness from maple syrup adds balance. Spruce and kombu introduce forest and ocean complexity that standard ponzu never attempts. This uncompromising approach has earned the 2024 Gold SOFI Award in the Condiments, Dressings & Marinades category, the specialty food industry's highest recognition.
